“Rum, respect and rambunctiousness” screams anything and everything touched by the Brasser Avenue distillery; especially the premium reincarnations of the spirit itself – playful on the palate, but rich with roots of respect to the ancient liquor; its distant origins; and the land on which it’s crafted.
Unperturbed by preconceptions and barriers, JimmyRum opened in 2017 with the exquisite Matilda – a 1,500-litre copper still from Trento in Northern Italy – spinning cane spirits to fill the beautiful charred American oak barrels (stacked behind the tasting bar), ready to age the liquor and give wings to its personality.
